Multi-layer construction helps spread heat more evenly across the cooking surface, reducing hot spots and improving temperature control. An aluminum layer/core is valued for fast, even heat distribution for consistent results. Copper is prized for quick responsiveness to heat changes; many copper vessels are lined (e.g., with stainless steel) to keep food from contacting copper directly. Thickness 2.5 mm. Exterior, glossy copper finishing, a tradition in the kitchen, fascinating and beautiful to see. Cast stainless steel handles assembled with strong section stainless steel rivets. Hand Wash Only.
