The induction griddles are not a “cold surface range” like the other induction products, the cooking surface comes up to the set-point temperature and stays there. From a cook’s point of view it is just like cooking on any other flat top griddle.

Advantages:

• There is very little wasted heat energy. The steel cooking surface is the ‘pan’. The heat is generated internally in the plate itself, so again it is very energy efficient.
• Our griddle plate is very thin compared to traditional griddles, it’s about 3/8" thick. This allows the unit to sense cold load on the griddle very quickly, and since induction by definition responds instantly, the recovery times are very fast. It also allows you flip product ‘in place’ on the griddle, instead of having to find an unused part of the griddle that still has heat stored in the traditional thick steel plate, so you actually have more effective cooking surface to work with.
• Very fast heat up time! On the order of 10-12 minutes from room temperature to maximum set point.
• Since there is no wasted heat coming out of the bottom of the unit, it can be placed pretty much anywhere, like on a refrigerated base with no worries about affecting the refrigerator temperatures or on top of Vending Carts made out of materials that can melt.
