You can manuallytemper chocolate in this machine by melting the chocolate between 110-120F. Once the chocolate is fully melted, bring down the temperature to about 82F to cool while gently stirring so that the chocolate can re-solidify. Finally the chocolate’s temperature is raised back to about 90F to complete the tempering. Tempering chocolate is an essential step for making smooth, glossy, evenly colored coating for your dipped chocolates.
