Special Stacking Frame, for easy and simple assembly of desserts, mousses and opera cakes in perfect uniform layers of 2, 3 or even more flavors. This frame makes it easy to layer and cut with beautiful results.
- Stackable frames for simple layer assembly.
- Includes Stainless Steel base plus (1) Yellow Aluminum frame 3/8″ High.
- Measurements: 13.75″ L x 13.75″ W x 1.95″ H (height with base and frame).
Step by Step process to make the perfect Mousse:
- Place the stainless steel base on a flat surface and position the first frame.
- Fill the first frame placed on the special sheet with the chosen filling.
- Smooth with ruler as product cools to a hardened base.
- Then place the second frame (sold separately) on the first, use another filling and smooth.
- Proceed in the same way for the third filling. Freeze the whole set with the sheet if required.
- Turn out by removing the frames one by one (do not heat with a torch but use a blow air gun instead).
- Layers of biscuits can also be inserted between the fillings.
Matfer Bourgeat provides a 1-Year warranty against any defects in material and workmanship.
The warranty does not apply to damage caused by abnormal or unreasonable use of any of the implements (including repairs or alterations other than by our Authorized Service Center) or normal wear and tear.
